The case features three unique vintages of Dalmore all finished and aged in sherry casks. Whisky aged in sherry cask will feature prominent dried fruit and nutty notes. The oldest, at 43 is matured in American white oak-Bourbon casks and finished in Cask #1—a very rare 30-Year-Old Apostoles Sherry Cask. This remarkable 43-year-old has aromas of honey, roasted chestnuts, sun-kissed raisins, cinnamon, and blood orange. On the palate, the orange notes continue with nuances of Madagascar vanilla, dark fruits, and dark chocolate. The finish goes on forever with the nutty notes of crushed almonds, grilled pineapple, and sweet brioche. The second bottle in The Dalmore’s Sherry Edition trio is a sweet and robust 28-Year-Old, matured in American white oak ex-Bourbon casks and finished in Cask #73—a very rare 30-Year-Old Matusalem Sherry Cask (Oloroso). On the nose, aromas of sweet tobacco, licorice and honey waft out of the glass, while the palate features further licorice notes as well as marzipan and marmalade. Let the liquid stay on your tongue for a few moments before swallowing. The finish has waves of dark cherry, chocolate, molasses, and cassia bark. Presented at cask strength (55.3% abv), try on the rocks or with a drop or two of water to smooth out the flavour. At 26 years old, while it may be the youngest in the trio, it is bright, lively, and balanced matured in American white oak ex-Bourbon casks and finished in a rare Gonzalez Byass 2002 vintage sherry cask. This one-off is truly an expression of the Dalmore “house style” with heady aromas of orange blossom honey, apricot and vanilla with a palate of raisins, candied orange, dried cherries, and sweet almonds.
