Dassai '23' Premium Junmai Daiginjo Sake is a high-quality sake made from locally grown Yamada Nishiki rice in the Yamaguchi Prefecture of Japan. The sake is brewed using a traditional method, which involves milling the rice grains to 23% of their original size, resulting in a refined and delicate flavor profile. Dassai '23' has a floral and fruity aroma with notes of pear, melon, and grapefruit on the palate. It has a clean and crisp finish, with a slight sweetness and a pleasant umami flavor. This sake is best enjoyed chilled and can be paired with a range of Japanese cuisine, including sushi, sashimi, and tempura.

Cragganmore distillery is one of the most prolific in the Banffshire region of Speyside. Pours amber with honey, caramel, fruit, and peaty/floral aromas. Layered flavours of malt, herb, nut, citrus, heather, and cocoa on the elegant and sweet palate with hints of smoke and sandalwood on a lasting finish. Pair with scallops.

The Macallan distillery of Speyside was founded in 1824 by Alexander Reid, a barley farmer. It was one of the first distilleries in Scotland to be legally licensed. Made from the finest barley and matured for 15 years in a combination of Sherry seasoned American and European oak; these casks without a doubt, are the single greatest contributor to the distinctive aromas and flavours, not to mention the outstanding quality of this Scotch. The apple takes centre stage in the 15, showing baked apples with butterscotch, marmalade and notes of toffee on the nose with a warm palate of warm apples with raisins with cinnamon, nutmeg and vanilla. The finish lingers with oak and spice.

Ruby red dress with purple highlights. A great intensity nose with aromas of very ripe black fruits (blackcurrant, blackberries) in perfect harmony with discreet toasted and buttery notes. In the mouth, the tasty texture provides immense pleasure and recalls a perfect maturity in an early vintage. A “classic” Médoc style with racy tannins and a structure revealing elegance in attack, smoothness in the middle of the mouth and power at the end of the mouth.

Bright, ruddy highlights show in the dark amber liquid. Dried cherry and fresh plum mix with cocoa and vanilla, leading to a flavor that resembles chocolate-covered cherry. One of the wines of the vintage, the 2000 has barely budged in its evolution since it was bottled and released in 2002. After ten years in bottle, it still reveals a dense opaque purple color along with a potentially sensational bouquet of blueberries, black currants, graphite, asphalt and background oak. Extremely powerful, full-bodied and superbly concentrated with good acidity and high but round tannins, this massive La Mission-Haut-Brion should take its place among this estate's most hallowed vintages when it hits full maturity in another one to two decades. I was surprised by just how youthful this wine tasted at age 12. If tasted blind, I would have guessed it to be around 4 to 5 years old. Anticipated maturity: 2020-2050.
