Koval was founded in Chicago in 2008 by Dr. Sonat Birnecker Hart and her husband, Dr. Robert Birnecker. The distillery was the first to open in the city since the mid-1800s. The word ‘koval’ means ‘smith’ or ‘blacksmith’ in many Eastern languages, but in Yiddish it also means ‘one who forges ahead’. Koval pays homage to Sonat’s grandfather who decided to “forge ahead” and move to the USA and start a new life from scratch. From the Domaine of Clarence Dillon, this is the second label for the Chateau La Mission Haut Brion. (Not to be confused with Chateau Haut-Brion). Dillon purchased this famous vineyard in 1983 and has brought it to the fame it has today, situated next to its famous neighbour notwithstanding. The terroir is similar and the 26.6ha of vines features about half/half Cabernet Sauvigon/Merlot with a small amount of Petit Verdot. In 2007 a new cellar, bottling centre and tasting room were built, combining modern technology with tradition. The wine itself for this vintage is 54% merlot, 45% cabernet sauvignon and 1% cabernet franc. Great structure with fine-grained tannins that provides the backbone to flavours of blackberry, raspberry, vanilla and spice. It's almost ready to go - try in 2026 or hold for another 5-10 years.

Chateau Giscours is a famous third growth located in the Margaux appellation of the left bank of Bordeaux. Documents indicate that the estate has been around since 1330. After World War II, it was purchased by Nicolas Tari who set about mondernizing the estate. Here there are 83ha of vineyards that make four labels, including a rose. The 2019 is made from a blend of 65% Cabernet Sauvignon and 35% Merlot, this a serious wine with high intensity aromas of spicy cumin and cloves, black cherry and blackcurrant with a full bodied palate that is layered and concentrated, bright acidity and a great. long finish. Hold for the next couple of years, and age for the enxt 10+ years.

Chateau du Tertre is a 5th growth in the 1855 Classification, located in the Margaux appellation on the left bank of Bordeaux. The chateau itself is 1000 years old, stretching over 52ha. In 1961, the estate was acquired by Phillipe Gasqueton who restored the vineyards and chateau after WWII. After his death in 1995, his widow sold the property to the neighbouring owners of Chateau Giscours, a 3rd Growth. In 1997, the estate was restructured and redesigned by the current Dutch owners of Albada-Jelgersma. This red blend has mainly cabernet sauvignon, with the balance of merlot, cabernet franc and petit verdot. A typical Margaux style with elegant floral and red fruits on the nose, yet with plenty of tobacco, cedar and dried herbs with a soft texture, and fresh acidity. Wait a couple of years to enjoy this and drink from 2025-2040.

The warehouses at Glenora are not heated, so aging virtually stops in winter. Thus, the whisky doesn’t reach its peak until its mid-teens. Soils from this active volcano provides resulting wine with a vein of minerality that speaks of the terroir of this prestigious region. Porcaria is considered most famous and sought after of the contrade due to the robust wine it produces. Velvety yet elegant with red berries and herbal notes.

Malecon Esplendida 1992 is a premium aged rum produced by Malecon in Panama. It is made from molasses and aged for 25 years in oak barrels, resulting in a rich and complex flavor profile. The rum has notes of vanilla, caramel, and toasted oak, with a smooth and silky texture. It has a long, lingering finish with a hint of spice. This rum is best enjoyed neat or on the rocks, and pairs well with chocolate desserts and cigars.

A rosé created by a long, gentle infusion of Pinot noir that extracts its juicy ripeness while preserving its tremendous saline freshness.
