In 2006, Don Julio, with his family, planted their final agave field. In honor of his devotion and craftsmanship, this agave harvest was carefully distilled, barreled, and set aside for a special use. To preserve this tequila and the exquisite agave piñas behind it, we have implemented a Solera aging system. The Solera aging method combines and matures tequilas of different characteristics finished in unique casks, allowing the final agave harvest to remain at the heart of this rare Extra Añejo Tequila. Our Ultima Reserva has been rested in oak, previously used to age bourbon, and finished in Madeira wine-seasoned casks. Salud, to creating only the exceptional.

There's a faint coppery tinge to this wine's rosy pink hue, and the fruit is somewhat muted, but this remains an enjoyable drink. Leather and scorched cherry flavors are carried by a supple, rounded mouthfeel, finishing with moderate length and intensity. Easy to drink, but not one to hold more than another few months. Certified biodynamic.
Red Wine
This biodynamic producer has hit in two consecutive vintages. The 2011 is a bit funky at first, so you may want to decant it before serving, but once some cabbage-like aromas dissipate, the wine delivers plenty of blackberry fruit, some garrigue notes and a touch of licorice. It's full bodied and creamy in texture, with a long, silky finish.

The Corton Grand Cru Les Maréchaudes from Domaine Michel Mallard stands as an exceptional wine, marrying strength and elegance effortlessly. Its bouquet is rich and complex, offering notes of wild strawberry, faded rose, humus, cigar, and toasty nuances. On the palate, this complexity is further enhanced by a delicate and well-balanced structure, culminating in a long and persistent finish that leaves a lasting impression of finesse.
The Aloxe-Corton 1er Cru La Toppe au Vert presents vivid red cherries and black plums on the nose, displaying focus alongside refinement and poise. With time in the glass, blue fruits emerge, adding depth to the aroma profile. On the palate, it is medium-bodied with fine tannins, initially displaying a subtle ferrous character. One of the original producers that grows Trebbiano Abruzzese, one of the few quality grapes of the Trebbiano group. There is not much of this exported and even fewer bottles of the Montepulciano. Francesco Valentini and his son are the only humans allowed in the cellar as Francesco never wants to introduce foreign microbes or yeasts to interfere with the ageing of the wine. These are some of the most ageable white wines in the world and in fact, could be considered “unicorns” as they are hard to find here in Canada. Truly collectible.
Located in Loreto Aprutino in the province of Pescara, the Valentini winery boasts of a centuries-old winemaking tradition. Francesco Paolo Valentini is a more than well-known figure in the wine world. The winery covers 65 hectares of vineyards dedicated to the production of Trebbiano, Montepulciano and Cerasuolo d' Abruzzo. Annual production is around 50,000 bottles. It is not possible to identify the production method as Organic or Biodynamic since the approach in the vineyard is unique and artisanal. Montepulciano is a powerful and impetuous wine. It is characteristic of bewitching with its important body and intriguing bouqet of aromas.

Siddiqui Brown Rum, pronounced 'sid-dee-key,' is designed to serve as a bridge between whisky and rum. It starts with Siddiqui White Rum as its base, which is then aged in American oak barrels. This process allows the rum to acquire its distinctive color along with a slightly smoky, oaky, and caramel flavor profile. Although Siddiqui is an American brand headquartered in California, its production for the international market is undertaken by the team from Penderyn in Wales.

Sweet, mild, clean fragrance of lemon, juniper and licorice. This is a complex gin; more flavors can be detected with each sip: cinnamon spice, astringent pine needles, a touch of lime zest and, finally, a big licorice finish comes singing through. Merlot contributes a softer edge while the Pollera Nera adds background notes of herbs and spice.

More peaches on the palate, with tinned pear and a little honey. Tingling spices in the drying finish, which soon becomes quite bitter – detracting from the overall balance.
